Veggie sloppy joes

Ingredients

1 tbsp Olive oil

1 Onion, diced

1 Orange capsicum, deseeded and diced

1/2 tsp Turmeric

1/2 tsp Paprika

1/4 tsp Chilli flakes

400g can Cannellini beans, drained

400g can Chopped tomatoes

1 tbsp Fresh coriander, chopped (optional)

2 Tiger rolls

1 Lime, sliced into wedges

2 tbsp Guacamole

Method

  1. Heat the oil in a pan and fry the onion and capsicum for 3-4 mins

  2. Stir in the spices and cook for a further minute

  3. Add the beans, tomatoes and 2 tbsp water

  4. Simmer for 12-15 mins, until the sauce is just starting to thicken

  5. Stir in the coriander, if using, slice the rolls in half and divide the mixture between the bases

  6. Add a dollop of guacamole, top with the lids and serve with the lime wedges
