Spicy chicken traybake

4 Chicken thighs, skin removed

1 tbsp Smoked paprika

1 tsp Chilli flakes

1 Leek, trimmed and sliced

1 Red capsicum, deseeded and sliced

1/2 small Cauliflower, trimmed and divided into florets

4 cloves Garlic

3 tbsp Olive oil

100g Kale, chopped


  1. Preheat the oven to 200°C /fan 180°C /Gas 6

  2. Arrange the chicken portions in an ovenproof dish. Sprinkle with the paprika and chilli flakes

  3. Add all the veg apart from the kale and dot over the garlic cloves

  4. Drizzle with the oil and roast for 15 mins

  5. Add the kale, toss everything together and return to the oven for 10 mins before serving
